Van de vroegchristelijke periode tot eind zeventiende eeuw maakten de Ieren volop zachte en harde kazen met mooie Gaelic namen als grus, maethal, maothla, milsen, mulchan of tanach. En opeens&#8230; verdween het kaasmaken nagenoeg uit Ierland. Rond 1907 was er hernieuwde interesse in kaasproductie. Echter, pas in de jaren zeventig bloeide de Ierse kaasindustrie weer op en kwamen er kazen van wereldklasse van de Emerald Isle.<\/span><\/em><\/strong><\/p>\r\n\r\n\r\n\r\n<div class=\"wp-container-3 wp-block-columns\">\r\n<div class=\"wp-container-1 wp-block-column\">\r\n<p>Om die mooie Ierse kazen internationaal op de kaart te zetten, werken kleine Ierse kaasmakerijen via het Ierse Food Board, Bord Bia, nauw samen met buitenlandse afnemers. Zo werkt MAAZ Cheese actief samen met de Ierse biologische kaasfabrikant The Little Milk Company (TLMC) en kaasmakers Cahill\u2019s en Cashel. Cashel produceert ook het kaasmerk Crozier en maakt samen met TLMC de uitgesproken biologische Cashel Blue Organic, die prijzen won in de VS en Frankrijk.<\/p>\r\n\r\n\r\n\r\n<h4>The Little Milk Company<\/h4>\r\n\r\n\r\n\r\n<p>The Little Milk Company is een boerenco\u00f6peratie die bestaat uit tien boerenfamilies die uitsluitend kleinschalig biologisch en duurzaam boeren. De boerderijen, koeien, melk en kazen zijn 100% antibiotica vrij en bovendien EU bio plus USDA organic gecertificeerd. De Jersey en Montbeliarde koeien geven een hoge kwaliteit melk, lopen veel buiten in ruime groene weiden en eten vers gras en hooi. Internationale winnaars zijn onder meer de biologische premium Cheddars en de CashelBlue organic, die Koningin Elisabeth II geserveerd kreeg tijdens een Iers staatsbanket. De exclusieve samenwerking met MAAZ Cheese biedt klanten toegang tot een topassortiment biologische Ierse kazen en aantrekkelijke, stabiele prijzen.<\/p>\r\n\r\n\r\n\r\n<h4>Cahill\u2019s Irish Farm Cheese<\/h4>\r\n\r\n\r\n\r\n<p>MAAZ Cheese levert ook kwaliteitsproducten van het Ierse Cahill. De familie Cahill produceert al meer dan vier generaties uiteenlopende ambachtelijke kazen. De kaasmakerij is perfect gesitueerd in de weelderige groene weiden van de Golden Vale en de oudste in Ierland. Het begon allemaal in 1860 met David Cahill die zakelijk succes vond in Amerika. Vier decennia later keert hij terug naar het Ierse Limerick en start een zuivelboerderij. De rest is geschiedenis.
