De eivormige kaasjes worden met de hand \u2018gesponnen\u2019 door de Italiaanse kaasmeester die de smaak, structuur en textuur bepaalt. Een proces dat al sinds 1970 plaatsvindt bij de ambachtelijke kaasmaker San Salvatore van de familie Letizia in Pietramelara, zeventig kilometer ten noorden van Napels. De naam mozzarella komt van \u2018mozzare\u2019 dat afsnijden betekent. De \u2018melkworst\u2019 wordt immers afgesneden tot kleine stukken die tot bollen worden gekneed.<\/span><\/em><\/strong><\/p>\r\n\r\n\r\n\r\n<p>Cristofaro Letizia, de vader van Giuseppe en Davide (tweede generatie), start met zo\u2019n 500 melkbuffels op 50 hectare land. Hij geeft de kinderen de kans om zich te specialiseren in de fokkerij en kaasmakerij. De familie boekt daarmee groot succes in binnenen buitenland. Het is niet verrassend dat we het hebben over een gebied dat behoort tot het B.O.B.-gebied (Beschermde Oorsprongs Benaming) voor buffelmozzarella uit Campania.<\/p>\r\n\r\n\r\n\r\n<p>De kaasmakerij werd in 2005 gemoderniseerd. Het bedrijf produceert zijn eigen voer, beschikt over drie melklocaties op 370 hectare land en heeft meer dan een miljoen euro ge\u00efnvesteerd in groene biogasvoorzieningen. San Salvatore gebruikt voor de mozzarella buffelmelk uit de omringende bergrijke omgeving. De buffel, oorspronkelijk uit India en Afrika, werd rond 1500 in Itali\u00eb ge\u00efmporteerd als sleepdier. Echter, al snel waren de dieren meer waard vanwege hun melk dan vanwege hun kracht.<\/p>\r\n\r\n\r\n\r\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" width=\"1024\" height=\"531\" class=\"wp-image-2945\" src=\"http:\/\/maazcheese.nl\/wp-content\/uploads\/2021\/06\/P4-mozarella-1024x531.png\" alt=\"\" srcset=\"https:\/\/maazcheese.nl\/wp-content\/uploads\/2021\/06\/P4-mozarella-1024x531.png 1024w, https:\/\/maazcheese.nl\/wp-content\/uploads\/2021\/06\/P4-mozarella-300x156.png 300w, https:\/\/maazcheese.nl\/wp-content\/uploads\/2021\/06\/P4-mozarella-768x398.png 768w, https:\/\/maazcheese.nl\/wp-content\/uploads\/2021\/06\/P4-mozarella-880x456.png 880w, https:\/\/maazcheese.nl\/wp-content\/uploads\/2021\/06\/P4-mozarella-450x233.png 450w, https:\/\/maazcheese.nl\/wp-content\/uploads\/2021\/06\/P4-mozarella.png 1080w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/figure>\r\n\r\n\r\n\r\n<p>Het leverde een gewaardeerd en wereldwijd erkend product op: \u201cLa Mozzarella di Bufala\u201d. De buffelmelk is van nature voedzaam en heeft een zachtere smaak dan koemelk. Buffelmelk is bovendien gezond met veel meer calcium, vetten en eiwitten. Daarmee is het een goed alternatief bij allergie en intolerantie voor koemelk. De melk van een waterbuffel is erg romig met een vetpercentage van 8 tot 10 procent. Koemelk bevat gemiddeld slechts 4,2 procent vet.<\/p>\r\n\r\n\r\n\r\n<p>Mozzarella is fris, mild en zacht romig met een vliesdunne huid. De textuur is veerkrachtig als een kussentje. Inspireer klanten met tips om de porseleinwitte kaas te gebruiken in risotto, pasta, salades of op pizza. Succes gegarandeerd. Deze Italiaanse specialiteit is natuurlijk bij uitstek geschikt om te combineren met rijpe tomaten, basilicum en een knapperig broodje met een scheutje olijfolie. Ook smaakvol en kleurrijk om gasten voor te schotelen met rijpe bessen, honingmeloen en gegrilde vijgen.
